Resources for healthy food service guidelines
Healthy food service guidelines help cafeterias, schools, vending machines, and other government food service facilities make healthy, nutritious food available to consumers. Guidelines establish practices for food and beverage procurement, nutrition benchmarks for prepared and packaged foods, and safety standards for employees and food handling. Guidelines may also require facilities to purchase locally sourced foods and follow green purchasing norms.
Exceed is a tool for using healthy food service guidelines. To begin, Exceed provides a brief background history of food service guidelines at the federal level. Next, there’s an overview of relevant laws for developing food service guidelines. Finally, we share detailed strategies for incorporating strong policy language into legal documents in order to support successful implementation. Specific case studies and stories throughout the Exceed site demonstrate how government entities at every level have developed and implemented healthy food service guidelines.
